Ingredients

3/4 cup frozen corn
1/2 can (about 7 oz) black or pinto beans
1/4 cup onion, chopped
1/8 red pepper, chopped
1/8 green pepper, chopped
4 ounces Low sodium V-8 or tomato juice, or canned diced tomatoes
Pinch of rosemary
1/2 teaspoon freshly squeezed lime juice
2 heaping tablespoons of fresh guacamole
substitution: 6 kalamata olives or 1 tablespoon of olive oil may be used instead of
guacamole

Yum, this is great.  I did a few changes- quadrupling the recipe, and cooking this over the stovetop (I started with the onion and pepper).  I also added "soyrizo" which is a natural, soy version of chorizo, gave it a little punch!  Muir Glen fire-roasted tomatoes are great with this!
