Ingredients

3 T Olive Oil

1 Onion, diced

2 Cloves Garlic, minced

1/2 Head Cauliflower, diced

Additional 4 cups of various veggies such as carrots, zucchini, squash, broccoli, mushrooms, peppers (cut in similar sizes)

 Handful of fresh herbs 

1 1/2 cups unsweetened soy milk

2 Omega 3 eggs

2 Table spoons whole grain polenta

Salt and pepper to taste

Omega 3 eggs are from chickens that have been feed a diet high in Omega 3 fatty acids, probably flax seed and such, and thusly their eggs come out high in the O3's.  You can find them at Whole Foods/Wild Oats/Trader Joe's in my area, and even sometimes in the regular stores.
