Ingredients
2-3 cloves of garlic, chopped
1 large yellow onion, chopped
1 medium eggplant, cubed (can be skinned, if desired)
2 red peppers, cut into approx. 1-inch chunks
1 green bell pepper, cut into 1-inch chunks
2 medium zucchini, cubed
2 medium summer squash, cubed
1 4-ounce basket of mushrooms, sliced
1 large can of diced tomatoes
Approx. 3 tablespoons olive oil
2 teaspoons dried oregano
Salt and pepper to taste

Hi:
Just wanted to warn you to add one teaspoon of oregano, let it simmer for a bit and taste it, then add the other if you think it needs more. Dried oregano can vary in intensity of flavor and you don't want it to overpower. Sorry I didn't mention that in the original submission!
