I'm finding these grains that are new to me, like quinoa and amaranth, are truly so ancient but we've been living in a box here in the good old USA when it comes to grains. Does anyone have a good recipe for amaranth? I've tried several and it's way too much like eating bird seed for my tastes but I shall keep trying. It took me many attempts before I found a good way to make brown rice. Now we prefer it to white rice. Guess we have to remember there's a learning curve here and none of these changes will happen overnight...unless someone's selected for the new study; then it WILL be an overnight change. Miss Kizzy

I've been looking for a way to cook brown rice so that we like it without cooking it until sticky. If you could share your method that would be wonderful

This looks good; I look forward to trying it. I have some quinoa to use up because I made the quinoa breakfast recipe once (UM, Phase One) and didn't care for it, but I think it was something about the peaches and quinoa combination. I'm going to try your recipe ... after I get some apricots!
