Ingredients

Mother Hubbard SoupThis is a very easy, low mess, soup—if you have a hand-held blender that you can immerse in a pot.  A wonderful creamy orange soup was served to Joe and I in Gevry, France.  The Wife of the Inn Proprietor likely processed it with a more traditional, food-mill.  I did my best to capture the flavor and texture.  –Lisa PatrellServes 8 to 12 Ingredients

Water

1 part Squash (1 Mother Hubbard, 2 Acorn, 1 Butternut etc.)

1 part Carrots (~6 large carrots equals 1 large squash)

½ part Sweet Potatoes (2 small or 1 large)—not Yams

1 clove of garlic for every carrot 

Herbs (in descending order)  Grind them slightly in a mortar with a pestal.     

Parsley
Marjoram
Dill
Savory
Thyme
Salt and Pepper to taste

What is a mother hubbard?  I have never heard of it.  The soup sounds delicious though!

I am allergic to squash.  Any suggestions for a substitute vegetable?

Hubbard is a type of winter squash.  Many winter squashes work well.  I often brought this soup to Kindergarten potlucks.  Hence, I thought is was cute to call it Mother Hubbard Soup, referencing the Mother Goose rhyme. 

how much herbs?

Hi, about how much of each herb would you use?  I'm new to this.
