My mom's bolognese sauce; it is easy to make and a super tasty tomato base sauce. I use it over sweet potatoes (as a substitute for pasta), but it goes with all pastas. Can be made meatless using vegetarian "meat" substitutes that fits our guidelines.

Ingredients

1 pound ground turkey breast or vegetarian substitute

1/4 cup extra virgin olive oil

1-28 oz. can diced tomatoes

1-7 oz. can tomato paste

2 cloves garlic, peeled

1 tsp. dried basil

1/2 tsp. oregano

1/2 tsp. black pepper

1 bay leaf 

2 cup fresh spinach, chopped

1 cup mushrooms, chopped

Spaghetti Squash

This sauce sounds like it will be great. I'm making it tomorrow night and serving it over baked spaghetti squash. If you haven't tried Spaghetti squash before, its really easy to make, slightly sweet, very versatile and makes a wonderful healthy base for sauces of all kinds...and kids love it.
