This recipe is fascinating to me because I've never had any kind of gnocchi, so I'm trying to visualize it. It seems like it should have been marked Phase II instead of Phase I, though, because it contains eggs? Also the optional grated cheese. That phase indication should be changed for the benefit of newbies.
I'm interested to find out there's gluten-free flour we can use, which I didn't realize, believe it or not. I don't think it's mentioned in the book (but it might be). Anyway, so thanks, Polyanna!

There are multiple companies out there that make gluten free flour mixes. www.glutenfree.com is a good place to look if you don't have access to health food stores and your local grocery isn't that progressive.
Or you can make your own - I use a brown rice flour mix that I found in the "Food Allergy Field Guide".

I'm brand new to any of this, and probably because of that have very little energy. So the first thing I do is figure out easier ways to do things and/or fewer steps to do things. Instead of SIX steps: scrub, cut, steam, (cool), peel, rice ... all before getting it into the bowl -- couldn't it just be simplified to two steps: BAKE/ROAST the potatoes whole, (let 'em cool a bit, so you can handle), then just cut each one in half and SCRAPE OUT the potato into the bowl ?? You would still get the nutritional advantage of the skin being on, during cooking, but skip a lot of steps. No disrespect intended. I haven't tried either way, so I don't know.
