1/3 cup extra virgin olive oil

2 Tablespoons rice vinegar

1 teaspoon oregano

1/2 teaspoon basil

1 clove garlic, minced

Salt and fresh ground pepper to taste

20 - 30 grape tomatoes

One 2.25 oz can sliced ripe olives

1/4 cup pinenuts

This is my favorite vegetable. It is delicious and low in carbs. To me, it tastes like lima beans. I buy it at EARTHFARE grocery store in the frozen vegetable section. If you don't have Earthfare, you can ask your health food stores. Some have a produce section.

This recipe is delicious. I make mine with corn kernels instead of olives and I chop tomatoes instead of using grape tomatoes. I don't have food allergies so I am quite lucky. This could only be used in PHASE II. You can serve it hot or cold. It's great!!!!!
