Help! I'm at the end of Day 5 of USD -- following it to the letter, using all the purchased food, so I just reach in the fridge at meal/snack time & zap it 1 min. in microwave & eat it! I'm so spoiled by having it all prepared, waiting for me. BUT I just realized that after 2 more days, there will be NOTHING waiting for me & I'm not sure what I can have for breakfast,for instance, except make some ultrashakes... Lunch? Supper? Is it just veggies (minus nightshades), fruits, chicken & fish? I really appreciate the step-by-step checklist for this week. What do I do next week? Also, a week from today I will be going on a family beach vacation, possibly with my 2 yr. old granddaughter along, so no time to cook or plan...what do I do? Can I not eat any bread or dessert, etc.? I need some guidance here. I am not planning on doing the UMD at this time...no time to get & read the book.

I've been trying to figure this out, also.  Please read chapter 16 in the USD book, starting with page 180, specifically page 186-187.  Book says this part is supposed to last for 2 weeks.  Guess it will be a few more days before I can eat those fresh tomatoes we are growing in our yard!  Maybe that means I will end the detox time sooner than I was going to do since I just read somewhere that the broth can be used later.  I had thought originally that I might continue detox until my broth is gone.  Cooking the chicken would be simple if you have access to a gas grill--just cook a bunch and have leftovers, or have some of the canned wild salmon.  I found the wild salmon in a pouch the other day.  I made a basting sauce for chicken using 2 tablespoons of organic extra-virgin olive oil, minced garlic(use a food processor for that to make it easier), juice of a fresh lemon, and some freshly ground peppercorns.  The chicken was delicious.   Organic beef and lamb are also allowed, no more than 4 ounce portions.  For the vegetables, cook them in quantity and refrigerate, and raw things like salads can be eaten.  I like broccoli, squash, zucchini, baby carrots, and sometimes make a steamed vegetable medley out of those.  Today, I cooked some fresh turnip greens, seasoned with garlic, organic extra-virgin olive oil, sea salt and freshly ground black pepper.  I have also tried the Asparagus recipe with red onions in the back of the USD guide, and I liked it a lot.  It makes 4 servings.  Also can have a wider variety of fruits during this time.  I have been alternating using frozen cherries, bananas, blueberries, and fresh strawberries in my shakes, which are made with 1 T. of rice protein powder and 1 T. of almond butter and 1/2 c. of almond milk(unsweetened variety).  If you have a Whole Foods Market, you can probably find those there.  If not there, some health food stores might have them.  I am going to have to check on whether the flax/borage oil is still supposed to be used then....I have forgotten, but I will continue to use the ground flaxseeds, which we keep on hand all the time, anyway.  I also plan to start adding some cinnamon and 1 tablespoon of dark cocoa powder to my shakes.  I was doing that earlier, then stopped when I realized that it was too early.  That is one reason I might continue the detox part a little bit longer. 

A lot of times when we go on vacation trips, we stay in a condo so we have a kitchen available, and I carry a cooler filled with whatever we are going to eat.  I don't like to pay resort area grocery store prices for food.  Next best thing would be a hotel/motel with an in-room refrigerator and microwave.  I say all of this presuming that you will be driving on your trip, and that you would have enough cargo space for carrying extra things.  For flying, obviously all of this would not be possible.  For restaurant suggestions, look on pages 187-188 of the USD book.

I will try those suggestions, and yes, we are driving & have a kitchen in the condo, so I can just contine there what I do next week (since we need two weeks before re-introducing the alergens). I have some more ideas for you at the beach:  if you eat meat, you're in luck.  There's tons of stuff to eat, and you might be able to cook it so that nobody will notice!  Marinate some meat in lemon juice & oil & garlic & throw that on the grill along with a sweet potato wrapped in foil (remember, those are not night shades).  It also tastes really good to marinate veggies like summer squash and zucchini and even onions cut the long way and put 'em on the grill--everybody likes those!!  Another really good thing can be portobello mushrooms marinated in a little red wine, olive oil, and garlic.  They taste like a steak after you've grilled them until they're juicy.  Serve all that up with a salad and everybody else will think you went to chef school, not that you're on a diet!

I love your post and the one underneath it, giving info on what to fix.  I'm not much of a cook, myself, cuz I don't give myself the time to do it.  But this is wonderful stuff, and I'm just impressed that you're helping so many folks on the web.  Keep it up!  My challenge is a week in a fishing village in AK, where I'm sure there'll be no health food stores or goodies ... and I must stay on this diet, not introducing anything.  I DO look forward to salmon, though.  Can we have sweet potatoes in this first stage of the ULtra diet?

I was a little worried, so I double checked.  Luckily, Dr. Hyman says sweet potatoes are okay on p. 114 of the USD, so eat up!  Here's one more idea that i discovered yesterday when I was feeling sorry for myself because everyone is eating ice-cream.  I cut up some fresh peaches, pears & strawberries, put them on skewers, and put the whole mess in baggies in the freezer.  They're great for my snack--and the best part is that everyone wants one and thinks I'm just eating healthy.  i hate it when everyone thinks I'm on a diet and wants to stick their two cents in about what I ought to be eating.  This way, they're all jealous.  Wink

Since more fruit is allowed on USD week 2, frozen bananas can be put into a food processor and whirled around for a short time.  Eat immediately and it tastes like banana ice cream.  I had forgotten this, so thanks for the memory jog.  I usually just peel them and freeze them whole, when they start to speckle, but some people prefer to cut them in slices and put them on a cookie sheet to freeze before bagging up the pieces.  That makes it easier to get a uniform consistency in the food processor.  Glad I checked this site!

I think I remember reading that sweet potatoes are okay, even the first week of USD.  However, I keep forgetting to bake one!  Maybe it is because I like butter and cinnamon on them and no butter is allowed for awhile.  Thanks for the reminder.

We have purple sweet potatoes out here but this could be made with garnets.  This was a huge success with my family:  I scrubbed and sliced the sweet potatoes crossways and laid them on  pieces of heavy duty foil, drizzled olive oil and added salt and  pepper and a little  cajun seasoning.  Baked them in the oven at 450.  They were outstanding!! A real repeater. 

I had planned  to finish them on the grill at the beach but we had stuck them in a plastic bowl, still in the  foil, and put the lid on and the  darned things finished cooking by themselves!!  We ate them as "pupus" (Hawaiian appetizers) while I cooked shish kebobs with cubes of marinated chicken, squash, onions (and tomatoes for everyone else).

I would also like to see everyone's "little tricks" posted in the recipe section.  That way, all of us can benefit, plus it will be left for "posterity" to see, and they will have an easier time than we have had.  I have a feeling that this program is going to become much more popular in the future.  I'm telling the people I know who have health problems about it--also people at health food stores so they can help to spread the word about it, and maybe get more business as a result. Smile

Reading all your posts has been so interesting!  (making me hungry, though).

Another you can do with the sweet potatoes on the grill....use foil to wrap them in after you slice them, drizzle with olive oil and then sprinkle with cinnamon and nutmeg.  Also, while you have the gill going, halve some peaches and put them on the grill (brushed lightly with EVOO), sprinkle w/cinnamon and grill until brown, just takes a few minutes.  Grilling the fruit really brings out the sweetness in it.

Is there a way we can post just "suggestions" instead of full recipes?  My problem isn't coming up with new ways to prepare the food, I just never write it down and then I forget what I've done.  I've gotta start using the computer to at least list the ingredients and method of cooking.

Diane(and others who will read this post), 

I have been thinking about posting some sort of topic somewhere so that we can post a recipe and let everyone offer suggestions before it is "officially" posted somewhere, sort of like we have done a few times on the "Seasoned Women" threads.  I'm still trying to figure out the best location on the boards to do that.  Seems like it needs to be under "tips & tricks" or something similar.  I've had to edit some of my postings, and if others could see the suggestions or recipes ahead of time, maybe they could spot things that I miss as I write things down, plus make comments to "refine" the recipes or suggestions.  You seem to move around the message boards a lot--can you think of a better location for such a topic?  I'd love to "capture" all of the good ideas that are being generated so that it doesn't take so long to find things--both for all of the current people and for people who begin this program later. 

If anyone else has any suggestions about this, please feel free to "chime in"!
