I have been to 4 different stores in the last three days to find all of the UM Phase I ingredients and still have some I couldn't find.  I'd like to know if others have found these items and what store, in what section of the store.  Also, if not found, did you substitute?

Pomegranate Molasses...  How to substitute?

Flax Crackers....  I ended up substituting with sesame rice crackers.  Any other suggestions or is that a bad substitution?

Sole... can't find!

Figs....can't find!!

I know how tough it is to find some of these ingredients.  I ended up ordering some online from Dayna's Market in Michigan.

Dayna's Market - Mediterranean

They have the pomegranate molasses for only $3.99 and they also carry dried figs.  They also have a ton of other interesting things like tahini and dahl, dried beans, etc., so take the time to "shop" at the site. The shipping cost can be a little high, but if you look at the price for pomegranate molasses on other sites, ($16 a bottle!), it isn't such a bad deal.  Plus, the people I dealt with there were VERY nice and helpful. 

But, I have always found dried figs at the local grocery store.  Sometimes I have to ask where they are hiding them, but they usually have them!  I know our Shaw's and Hanneford's have "health food" sections where they carry bulk items such as grains, nuts and dried fruits, so I often buy them there because they are dried without sulphur added (to preserve the color). 

Someone on this message board posted a recipe for flax crackers.  I think if you did a search for them, that message would pop up. (I am afraid to try it now and then lose this message.  I will try after I send this message and if I find it, I'll post.) It was a simple one, just ground flax seed and water, I think. 

As for the sole, any other mild, white fish filet such as cod or flounder would be a good substitute.  I think the idea of eating these fish instead of tuna, halibut and swordfish steaks is to stay away from the mercury known to collect in the more fleshy fish like those.

I'm pretty intolerant to any form of wheat, but Ezekiel bread never seems to bother me.

 

As for your "missing crunch" comment... have you tried making flax crackers?  All you need is ground flaxseeds, water and parchment paper.  Take 4 tbls flaxseeds, mix with 2 tbls water and spread onto a piece of parchment paper.  I put it in the microwave for about 1 minute... but it can take a little longer if you spread it thick.  You can even try sprinkling some spices on it.  Cinnamon & stevia is my favorite... but you can try garlic powder & sea salt, or any other combination.  It's MUCH cheaper than buying flax crackers... and it's simple to make.

Has anyone tried this recipe?  It sounds too simple to be true.   I wonder if wax paper will work as well since I don't have any parchment paper.

I want to vouch for Dayna's.  I also posted elsewhere.  It turns out that their store is a little more than a mile from me.  It is a tiny little store that is great to walk into because it smells so wonderful from the spices they sell.  It is a very warm, friendly place selling mediterranean supplies.  The pomegranate molasses is fantastic.  The guy manning the counter told me that it works well on salads and in recipes.   I put it on my salad (just a little goes a long way) and it was wonderful.  I understand that they ship very quickly too.  I wish I had more to buy from him because I want to go back there!

I tried the crackers--not sure what to expect.  I added a little bit of cinnamon and pomegranate molasses for taste.   I don't know what they're supposedd to look like when they are done, but they don't really look much like crackers.  I let them cool a little and then cut it up.  They taste okay, but I'm not sure if they are strong enough to be able to put the almond or cashew butter on.  I'll wait until they dry.

 I also didn't know whether I should refrigerate the molasses or not, so I did, yesterday.  Ever wonder where the phrase "slower than molasses in January" comes from?  Don't stick it in the fridge!

My little "problem" with the "solidified" sauce mixture(see post about this under "Ask the Nutritionist" "Questions about USD, Weeks 1 & 2 " for more understanding) was solved when I transferred it to the refrigerator door shelf.  I was so accustomed to seeing the congealed product in the main part of the refrigerator, that when I finally spotted it in the new location, I didn't recognize what I saw at first.  I have been storing my "sauce" in a leftover 8-ounce glass organic almond butter jar.  Might as well recycle this in my own kitchen, since it is a good size storage container with a wide mouth! Smile

BTW, I'm making a note to come back to this topic--good information here.  Thanks for posting.

 Yes, tilapia is a lot like sole.  Funny that you cannot find sole as often as you can tilapia, these days!  Sole used to be everywhere, a few years ago!  Flounder is also a good substitution.  I just tried pollack, didn't like that very much though.  I happen to LOVE tilapia!

II'm in the first week of Stage 1 of the UM diet. . . found a site that says you can make your own--with 1 quart (wow, that's a lot) pomegranate juice, 2/3 c. sugar, 2/3 c. lemon juice.  Simmer until it reduces to 1 1/3 cups.  Also, it says you can just simmer any quantity of pomegranate juice until its thick enough to coat a spoon.  Now that works for me . . . especially considering we aren't supposed to have sugar!  Sounds cheaper too . . .  we aren't supposed to have fruit juice either, but my son loves it, so great, I can give him what I don't use.

Welcome, and thanks for posting this information!  I have been seeing unsweetened pomegranate juice in supermarkets, so this sounds promising.  I have been using some "ready-made" pomegranate molasses and I really enjoy the taste of it.  I have also used small quantities of agave nectar, another sweetener.

It would be nice not to have to pay shipping on the pomegranate molasses.  I bought 6 bottles of it, and so far, I have used only a portion of the first one .  A small quantity of this stuff goes a long way--same with agave nectar.
