I've heard to stay away from soy products due to estrogen levels or inability to get quality/safe soy products. So, I'm thinking of replacing soy milk with rice milk in the breakfast recipes? Comments? Advice?

We are very familiar with the scientific research on soy and stay abreast of the data including discussions with some of the top nutrition researchers in the country. There are certainly many alternatives to soy products as the legume world is very diverse, so feel free to make substitutions as desired. You can integrate a rice protein powder for a shake, numberous types of beans in the menus, almond, hazelnut, coconut, rice or hempseed beverage in place of soy milk, etc. We recognize that each individual must be comfortable with their nutritional choices and as a nutritionist working with patients every day, I honor individual preferences and personalize menus based on multiple factors including soy discomfort. There is alot of controversy surrounding soy but it is our opinion that soy can be a healthful addition to your diet when used in the following manner:1. Moderate intake - which has been defined as up to a couple servings/day (ex. 1 cup soybeans, edamame, tofu, etc)2. Organic soy - this is important so choose organic soy foods3. Soy tolerance - soy is recognized as a one of the 8 common allergens, although I must say I have NOT found this to be the case in the thousands of patients we have tested. We will continue to review the soy research and sift through this widely debated topic. As I have said many times, how come the cow and the pig and other animal foods have not received the attention (often demonizing) that this humble legume has generated? Kathie Swift MS MD
