Amaranth?

Currently beginning UltraMetabolism 
Not yet begun the UltraSimple Diet 
I am going to start Week 1, however on the first meal I am stuck already? What in the world is amaranth, and because I really don't think I can get it here in my small town, what can I substitute?

I live in the Netherlands and I can not buy amaranth here either. Can you find quinua instead? I wikipedia amaranth-- here is the website http://en.wikipedia.org/wiki/Amaranth
I don't think you need to use amaranth for the recipe of breakfast mentioned on the book. If you can find quinua or brown rice, you can use then instead. Brown rice needs longer time to cook so I suggest you cook with water first and then add soy milk.

Amaranth was hard for me to find also. The package I have is from Arrowhead Mills. There website is www.arrowheadmills.com. I don't know if they sell it at the website but it might be worth checking out. It's a grain and I think it's quite yummy.
I'm on week six of UltraMetabolism. While I couldn't find amaranth, I used brown rice. I didn't try all the recipes. I bought the cookbook and used quite a few from there. I also used recipes from other cookbooks as long as they stayed within the phase I guidelines. I don't know how much weight I've lost because I don't have a scale, but I had to get rid of two pairs of jeans because I could pull them off without unbuttoning them. A lot of my clothes are getting big, and I feel great. I'm encouraging you to stick with it and do the best you can. Think of it as a journey. Good luck.
