Where I work there is a wonderful cafe with a sandwich station, grill, soups, salads, sautee ("meal") stations, etc. Each day I bring in my own brown rice and get a side dish of whatever veggie the are serving at the meal station and lunch is ready! The upsides: huge variety I don't make at home (brussel sprouts, beets, cauliflower, butternut squash, etc.) and when I check out lunch costs me just 91 cents.
Add in the cost of the rice (I use the most expensive organic short grain brown rice w/ tumeric, olive oil, and garlic) and lunch probably costs me about $1.25.
As the kids say, easy peasy!

HiBrenda:
I too have found that making use of the corporate cafe is really a big help in cutting down on prep time, so congrats to you on this discovery too. I want to work where you do because by the time I get my fresh veggies or salad it's almost $3, but I'm worth it.
I'm even trying to change some of the staples that they offer by requesting brown rice on the asian stir fry station and insisting they use olive oil instead of vegetable oil. I'm finding it a lot easier to stay on the program with little prep time as a result. Maybe we can start a whole USD corporate revolution!
