 Hello,

 I am almost finished with the UltraMind Solution and am about to start the 6 week plan. Could use some advice for the diet. I am 42, 6'2" and only weigh 165, should be about 185 for my height.

 I have always had a very high metabolism and cannot gain weight. Would love to gain and have always tried shakes with no luck.  The diet will be very hard for me. I do love the white flour and sugar. I eat almost no vegetable or fruits because I hate the taste.

 My concerns after reading some of the posts are my weight. So many people mention losing weight and I don't want that if possible. If I try to cut out dairy what can I do for shakes:  I can stomach fruit put in a blender with ice and milk for a smoothie for breakfast and am thinking that I may need a few a day just to get my bare minimum of fruits and vegetables. Can you suggest anything for a milk substitute that I could use in shakes and still give me some calories?

  I know there is sugar in those V8 Fusion drinks(fruit and vegetable servings). Aren't I at least better off drinking those than nothing?  Or do you frown heavily on those?

First I'll address your question of milk options, which I find to be very difficult. Unsweetend soy milk is generally the least expensive and easiest to find or you can use almond mild which I like in a nut butter shake. You will be able to get at least one to two servings of fruit in each shake so that will help. Generally Dr Hyman does not recommend juice because it converts too quickly to sugar and spikes your insulin. Topping chopped fruit with nut butter or a some chopped nuts may help you enjoy them better on their own, which should be a goal because they are really so good for you and you can grab an apple and some nuts on the way out the door is a great snack for the road.

When I quit smoking, my boyfriend agreed to eat vegetables but the only one he liked cooked was green beans and he would eat a salad if it had cheese and bacon on it. I found he enjoys, kind of, vegetables that are roasted in the oven and they are so simple to make. Just chop up your veggies into bite sized pieces (peel if needed first), drizzle with olive oil and sprinkle with salt and pepper. Cook in a preheated 425 oven for 15-25 minutes or until tender. Try this with potatoes, asparagus, beets, carrots, parsnips even corn on the cob is good this way. I usually flip everything over half way for even cooking. Another great way to get more vegetables in your diet is with soups.

You may find that you actually gain weight on the diet as you eliminate foods to which you may be sensitive and add the walking.  Sometimes if you have food sensitivites you may not metabolize them as you should and your body may not use the nutrition.

I second the notion of adding nut butters to your menus, in shakes and also for dipping apples, etc. in. You can spread almond butter on an apple and add flax seeds to it for a good, calorie-high snack.

Also, adding seeds and nuts to everything is a healthful way to increase your calories. Make up a big back of trail mix using the right fruits, nuts, etc. and you can snack on that all day. Almonds, walnuts, and macadamias are great. Be sure to use flax or olive oils as much as possible, too. Both add healthful calories. If you like avocados or guacamole, that is another one. There is a delicious guacamole recipe in the Ultrametabolism cookbook.
