This way of eating has made us enjoy food again. I continue to be amazed at the difference our eating changes have made in the way we feel and look. I am now down 50 lbs and there is no stopping me. I have become a nutrition fanatic and that is a good thing. Just wish it hadn't taken 30+ years to discover that this is what really works!

We have done extensive research on eating healthy and have made a statement of our beliefs which we are living by. Our personal health philosophy: We believe we were made by God to serve and love Him. One of the ways we can try to honor God is to be a good steward of the body He has given us. As part of that philosophy we choose to put into our body those foods that will promote health. On the contrary, we choose not to put things into our body that are known to harm our health. For us this means a mostly, whole food diet. Learning to be good stewards of our bodies and health begins with making a decision. We believe that our body is a gift from God and is to be nurtured and cared for properly.We believe that much of our prescription drug use could be eliminated if we develop an effective health philosophy and stick with it. Food is the best medicine. We believe if we develop and follow through on a good philosophy of health we will feel better mentally and physically, we will have less worries about health issues such as developing cancer and heart disease, and we will have more energy to do the things we enjoy. We also believe our brain will work better.We believe in the principle of eating food “as close to the garden as possible.” That way when someone offers us a soda, we don’t have to think about it, we can immediately say “no.” After all what garden did soda emerge from?We believe that if an item is not a whole food item, it should not be in our diet.We believe that raw fruits and vegetables offer us the greatest protection against cancer more than any other food.We believe that advertisers are selling a product, pure and simple, and often are exploiting the benefits of a single nutrient to make a pitch to get us to buy their product. We will not be taken in.We believe that our body is an incredible self healing machine that only requires the right fuel (nutrition) to maintain health and well being, and because of that we will choose my foods accordingly.We believe we should incorporate as much whole, raw food as possible. We believe meal planning should include a lot of raw food, whole foods and limited animal products. We believe our meal plans should include as many dark green and other brightly colored vegetables as possible. Foods like dark leafy greens, carrots, bell peppers, broccoli, red cabbage and other cruciferous veggies should constitute much of the food we eat.We believe in eating whole fresh and dried (unsulphured /unsweetened) fruits for snacks, as well as nuts such as almonds, walnuts and pecans. We believe in eating soups, baked potatoes, brown rice, and a variety of delicious bean and vegetable dishes.We believe that to make the transition to a healthy diet meal plan we must acquire knowledge, knowledge, knowledge. Having the right knowledge will be one of the keys to success. Lack of knowledge will be one of the reasons we could possibly fail to make the transition permanent. We want to maintain our health and will be intentional about educating ourselves concerning the connection between food and disease. We believe that juicing is an important part of our plan and will incorporate it as much as possible.We believe processed foods are not good for us and will limit their consumption. We believe we need to drink a minimum of 8 glasses of water daily so we can flush the toxins out of our system and stay hydrated.We believe that being overweight is not a problem that will ever be corrected by a diet program or a diet drink! We believe that the diet that helps to reduce weight in the short run needs to be the same diet that creates and maintains our health in the long run….we believe we can control the cause of our obesity by what is at the end of our fork.”We believe that my eating should be a lifelong process of nourishing ourselves. We believe that we must rebuild and rejuvenate our body, mind AND spirit. We believe we need to be eating real, whole foods to gain our health.To accomplish our goals we will:- Eliminate processed foods, sugar, and other stimulants
- Choose organic produce and animal products whenever possible.
- Eat Cold-water wild, not farmed fish such as salmon, halibut and tilapia.
- Eat omega—3 eggs
- Create mills high in low-glycemic legumes
- Eat a healthy variety of fresh fruits and vegetables.
- Use more slow-burning low-glycemic vegetables
- Focus on anti-inflammatory foods
- Eat more antioxidant-rich foods
- Include detoxifying foods in our diet
- Use herbs
- Avoid excessive quantities of meat and use lean organic, grass-fed, or free-range animal products as much as possible
- Eat garlic and onions
- Eat a diet high in fiber
- Use extra virgin olive oil
- Use organic soy products
- Increase our intake of nuts and seeds
- Eat 1-2 oz. a day of chocolate made from at least 70 percent cocoa.
- Limit alcohol to no more than three glasses of red wine per week
- All processed or junk foods
- Foods containing refined white or wheat flour and sugar
- All foods containing high-fructose corn syrup
- All artificial sweeteners
- Starchy high-glycemic cooked vegetables such as mashed white potatoes
- Processed fruit juices
- Processed canned vegetables
- Food containing hydrogenated or partially hydrogenated oils.
- Processed, refined oils such as corn, safflower, sunflower, peanut and canola
- Red meats (unless organic or grass-fed) and organ meats
- Dairy products
- Caffeine (except in green tea)
In addition we will eliminate the following from our diet:
I eat between 900 - 1400 calories a day and am NEVER HUNGRY. I feel like we are eating gourmet meals now. I have sleep apnea, type II diabetes, and several other weight related health problems. So far my doctor has taken 3 of my prescription meds away and most of my problems (like edema) have all but disappeared. I use FITDAY to track everything that I do. It is a wonderful program. I copied two days of menus but have been unable to copy them to here. If you want to e-mail me with "Sample Menu" in the subject line I can provide them to you. (hawaii@paradiserelocation.com) Fitday really helps me to see where I am going overboard and lets me really keep an eye on nutrition and calories. I have bought every book I can get my hands on for cooking the Whole Foods way, whole grains and beans, legumes, etc. to get lots of ideas for some great tasting food. I also have been doing about 3-4 hours of research every night. I am not one to believe everything I read and I wanted to make sure that what was recommended is really the RIGHT way to eat. It really works! I have 204 lbs to lose and plan to have it off by next summer, at the rate I'm going its a real possibility. Fitday helps with planning that also. I can actually eat at 1700 calories a day and still meet that goal. Good luck with your plan.

I wish I could copy your list! You have obviously done a lot of research!
I will limit my "swallowed" alcohol to that found in flavorings/extracts, etc., whenever I get to that point on the USD. I plan to eat fresh, frozen, or home-dehydrated(if possible), "properly" washed CA red grapes(all organic, if possible), instead. But I did just buy 2 pints of rubbing alcohol for our first aid supplies.
Hmm--maybe I should eat those grapes up to 3 times a week--I have some in the freezer already, plus a few home-dehydrated organic raisins, and some refrigerated fresh CA grapes ready to preserve. Gotta make room for this week's fresh produce sales.....

We've spent so many years putting just anything into our mouths that it just makes sense to find out as much as we can about what is really good for us. With all the stuff going on in the news lately I don't think I ever want to eat anything boxed or canned again. If I make it fresh I know what's in it. I know that wine is supposed to be good for you but we have not had any yet. I do miss my tequilla for margaritas. Maybe someday when I'm skinny! I'm not crazy about grapes but I do love cherries. The best part of this is finding out about new foods and discovering how good they are. I just discovered goat & sheep cheese. Love it! The difference in taste between range fed chicken, and grass-fed beef is astonishing. Don't think I'll ever eat any other kind! Unbelievable the difference it makes. What really amazes me is that I am even doing this. If you had told me 3 months ago that I would make this many changes I would not have believed it. Its great though...I finally found the thing that would make me care about ME and follow through on it. Hope you have as much success!

We love fresh cherries so much after eating them for the first time this year, that I have been freezing and dehydrating some so that we can continue to enjoy them in the future. There have been lots of fresh cherry sales around here during this Summer and I've been careful to wash them with Veggie Wash and rinse them 2 times in filtered water, since I seem to have an allergic problem with the Veggie Wash if all of it is not washed off.
I haven't tried goat cheese yet, but I will keep that in mind for when I get to Dairy re-intro for USD. Thanks for mentioning that. I am really missing cheese right now--before USD, I used to eat extra sharp cheddar and colby cheeses a lot. Have you found anything about those types of cheeses while doing your research?
We have eaten free-range turkey once at a family dinner, but that was several years ago when I was not as "informed" as I am now, plus, I have not been a huge fan of turkey--I used to prefer the taste of chicken. I have found locally, on sale, some chicken that is advertised as having 100% chicken (which I think means no steroids or no preservatives), but I am still concerned about antibiotics, and I continue to look for a brand of chicken in grocery stores that does not have antibiotics in the food chain.
I am very pleased to be finding a larger variety of "healthy" food in local grocery stores. Of course, the grocery stores sell many other foods, also, so I have to be very selective, and shopping trips take awhile longer since I am learning as I shop. A few minutes ago, I found the resource list beginning on p. 316 of UM, so in the future, that will become my additional guide in purchasing things to eat. I am amazed at how many of the listed brands I have already purchased and started to consume.
Have you ever tried frozen CA red grapes? We find those to be delicious and we have been eating them for years.
Also, have you found any information about organic vs. normal garlic? I have looked, but so far I have not found specific information about garlic. At this point, I presume that garlic is in the same league as onions, as far as pesticides are concerned.

We have not tried frozen grapes before. We depend on Costco for most of our fruits, they seem to be the cheapest. I also use the garlic in the dairy case at costco. The fresh garlic buds seem to go bad so quickly. I have kind of gone overboard on this whole thing which is amazing to me as well. I purchased a FoodSaver vacuum sealer and seal ABSOLUTELY EVERYTHING! I want to make sure that food remains fresh and retains as many nutrients as possible. It also keeps stuff 2-3 times longer in the fridge & freezer. When I make extra beef, fish, chicken or turkey I freeze the leftovers which just lets me pop the packet into boiling water for a quick-fix meal. I do the same with leftover pasta (which I make myself) and veggies,etc. When you make turkey or chicken try cooking them in a covered shallow pan in organic chicken broth! I spray my pan first with olive oil so it won't stick. It makes them so moist and flavorful and it does even cook down and browns them. We do not eat ANY "cow" dairy products, we drink rice milk which we love and only eat the sheeps or goat cheese. I make my turkey taco salad with using veggie shreds...tastes just like real cheese. You'll pay more for organic, and free-range, grass fed, but our Sack-N-Save puts out the previous days items twice a day and if you're lucky you can get them for half-price. I would love to have a Whole Foods grocery here. Maybe someday. We have a side-by-side and the largest upright freezer Sears makes and its stuffed with things. The only thing I found out about garlic is that organic garlic tastes better.

When I went to Publix this afternoon, I was talking to an employee at the front of the store about "healthy" chicken. When I mentioned that I was looking for some chicken with no antibiotic "issues", she told me that the store now sells "Greenwise" chicken and beef, both of which are antibiotic-free, hormone-free and steroid-free! It appears to be a store brand. I am excited to know that I will be able to buy this by traveling only 2-4 miles, depending on which store I go to. While I was there, I got a lesson on selecting fresh apples from a customer who likes those, and a lesson on seafood from the seafood market employee who sold me some Wild-caught Soho salmon. Earlier, I had tried the Sockeye type. I had some frozen Soho salmon earlier this week, and I really enjoyed that.
Thanks for the information about garlic. Have you ever bought any of the pre-minced garlic before? I have been trying some, but I think I like the whole cloves better. Do you know if it makes any difference nutritionally whether the cloves are peeled long before eating? I'm like you about wanting to conserve nutrients, paradise.
Thanks for the information about cooking the chicken, also. I bought a Publix Greenwise whole chicken tonight, and I plan to try the crockpot for cooking that. I have a crockpot, but I usually forget to use it. Our daughter uses hers all the time.

I have used all kinds of garlic. I think I'm enjoying the ones from Costco the best as they are already pealed. I do have the minced also. I don't think it makes any difference but I have not read anything on that yet.
I have an electric "bean pot" on the way. Can't wait to try that. I made my own baked beans a couple of weeks ago and they were delicious. I had no idea I could be such a good cook. I told my husband that we need to start taking pictures of all our meals because they are so colorful and beautiful.
I had to go to Kaiser today for a diabetes checkup. Found out that the "diabetic retinapothy" I had 8 months ago (blood spots in my eyes...what makes you go blind) was totally GONE! My blood pressure which is normally 120/80 is now 98/60 which they told me is wonderful. I am also down 57 lbs now! My doctor has already pulled me off of three of my meds. Once again... I'm amazed at how much this has changed my life.

Had not heard from you for awhile. Just wanted to give you an update on my progress and tell you that I hope you are doing well also.
I have now lost 66.5 lbs and my husband has lost 18. 138 more to go! Still feeling great and am enjoying my new sense of energy and being able to wear cute clothes again. I can do so much now that I could not do before. The one thing I CAN'T do anymore is float in my pool. I used to be able to just hang in the water with no treading or movement at all. Now I sink down to my eyes!
I hope the plan is still working for you.

i was 201.2 pounds and she was 216
i am now 173.8 and she is 175 food makes me feel good again..i have eaten toxic foods on occassion and have seen myself sneeze, get an itchy nose, phlegm etc.. which stops me from going back to eating in my old ways..
i plan to eat this was forver!
i use fitday also, the downloadable program..it has evrything you need..a weight tracker food tracker and diary!
