I'm on day one of the USD and I'm confused about using eggs as a protein source.
In the book, Dr. Hyman cites organic omega-3 eggs as a good protein source, but eggs aren't listed on the shopping lists and there are no recipes at all that include eggs.
So can I have eggs as a protein source, and if so, how?

I'm pretty sure we're not supposed to have eggs during the USD week. I caught what you read also, and found that confusing.
Also it says during the preparation week checklist to "eliminate white flour and sugars" but only in the fine print do you see that they also mean potatoes.
