I made my ultra broth yesterday, and the results have turned out a bitter broth.  I am wondering why.  I used carrots, daikon radish, parsnips, shiitake mushrooms, red kale, onion, garlic, celery, small amount of sea salt, and whole pepper corns.

turnips and winter squash will add sweetness and balance the bitterness.  I used all the same ingredients plus these two and have really been enjoying the broth.
