Thanksgiving pie

I made this for breakfast on Sunday, but I think it will be a great substitute for the anticipated holiday pie. This serves 4-6 so adjust accordingly.
Sweet apple ginger crisp
I started by thinly slicing 4 apples and added them to a sauce pan with a small pat of dairy free "butter" (just for the creamy texture) and 1-2T of water, cooking over medium heat. For phase II you can add a little agave necture for extra sweetness or just use at least one sweeter apple.
While the apples cook, season with 1/2" fresh grated ginger and cinnamon to taste and just a pinch of salt. Now for my secret ingredient a jar of baby food sweet potatoes or left overs. Cook all ingredients for about 15 minutes until apples are to your preference of softness (I like them to have a little bite) and water is reduced or add a tablespoon of oatmeat to absord liquid.
Create a topping using any combination of chopped nuts, oatmeal, and/or little unsweetened coconut. Any mixture will be good, but I love walnuts and apples together. Dust with cinnamon and ginger and put under broiler for a few minutes to toast the nuts.
Optional cheats, it is a holiday after all. Drizzle with a creamy topping of homemade whipped cream or yogurt.
