Faux Cherry Ice Cream

Doing the UltraSimple Diet 
Yield: 1 serving
Place 3 oz. (rounded 1/2 cup) of halved frozen cherries into bowl of a mini-size food processor.
Add 1 T. organic almond butter and 2 T. unsweetened vanilla or unsweetened chocolate almond milk(I use the Almond Breeze brand).
Pulse until creamy, and eat quickly, as this will melt quickly.
This tastes a lot like cherry ice cream. Delicious!![]()
Variations: add 1-1 1/2 t. dark cocoa powder plus 1-2 t. of extra unsweetened almond milk(chocolate or vanilla flavor) before pulsing.
add 1 T. of lightly toasted sliced almonds before pulsing

I found Hershey's Cocoa Special Dark powder at my local grocery store about 1 month ago. I had never seen it until then, but I was excited to find it. I have also found dark cocoa powder at another store called Save-A-Lot. I don't know if the formulas of the 2 brands are the same or not.

Oh my goodness that does sound yummy! My husband went "berry" crazy at the stores this week and we now have fresh blackberries, blueberries, raspberries and gooseberries. We got strawberries too, but I put them in the freezer because they were so ripe. I've never eaten gooseberries before, so I'm curious to taste them. If they taste good, the just might make their way into faux ice cream! I'll let you all know!
