Faux banana ice cream

Peel and slice 2 large bananas and place bananas on waxed paper on a metal cookie sheet. Put cookie sheet into freezer.
When banana slices are frozen, remove them from freezer, add 4 T. of cold unsweetened almond milk, a little at a time, and pulse in a medium-sized food processor until creamy. Quickly remove from food processor and eat quickly, because it will melt fast.
This makes 4 servings, and we have enjoyed eating this for several years.
I also freeze all of my bananas whole once they start to "speckle".
This can be done in a freezer bag--peel them first. I always have frozen bananas on hand that way. These can also be eaten whole, without processing, for a quick, cool snack.
In a food processor, the somewhat thinly-sliced bananas work better for this recipe than a whole banana.
Later: Banana "chunks" also seem to work for this, as long as they are not too thick.

I forgot to mention--PEEL the whole bananas before freezing. The banana peel is not very appealing to the eye if it is chilled in any way. Hope you enjoy the Faux Ice Cream!

I wrote this down from memory, not recalling that I needed to add some liquid to make it creamy. I modified it by adding unsweetened almond milk, making a larger quantity, and pulsing the food processor instead of whirling. So if you read it the first time, it has been altered since then. Sorry if this has inconvenienced anyone.

After posting this, I thought about trying faux ice cream using frozen blueberries, strawberries or cherries, following a similar procedure to the faux banana flavor. I haven't tried this yet, but since I am currently omitting bananas from my shakes, I may experiment with these additional flavors sometimes soon. If anyone tries this and it works, please post findings here. Thanks.
