Delicious Crockpot Chicken

Doing the UltraSimple Diet 
Blend the following ingredients together to make a rub(to save time, measure ingredients with a "sliding" multi-size measuring spoon into a small, clean, dry, glass container with lid, then cover and shake):
4 t. sea salt, plain*
1 t. cayenne**
1 t. onion powder
1 t. thyme**
1 1/2 t. freshly ground pepper
1/2 t. garlic powder
(optional: add 2 t. paprika**)
1 approximately 4-pound antibiotic-free, hormone-free whole chicken. Check cavity and remove any contents as necessary.
Rinse chicken well with filtered water, then pat dry with paper towel. Rub generous amounts of above mixture on chicken skin, "armpits", crevices, inside the cavity, etc., trying to put as much of the rub as possible under chicken skin. Label any leftover rub and save for later.
Mist liner of crockpot*** with OEVOO in a pump spray bottle. Place seasoned chicken into crockpot, breast side up. Add about 1 inch of filtered water.
Cover crockpot and cook chicken on low for 8 hours without removing lid.
Cook until chicken falls off the bone. Remove skin, bones and any connective tissue before serving.

*When I no longer take recommended supplements, I will use iodized form.
**I use mostly organic herbs due to potential allergic reactions.
***My crockpot is elongated-round, and programmable.

You might be "amused" at my attempt at art. I have been trying to get my husband to take a "before" and "after" picture of it to put on my profile!
I seem to have become a "creative" decorator!
