"Butter Chicken" for vegetarians

Doing the UltraSimple Diet 
One of the things I missed going vegetarian was a recipe called Butter Chicken, so I've searched for a recipe that I might be able to convert.This one is quite addictive!
2T extra-virgin olive oil
1 onion, thinly sliced
2 cloves garlic, minced
1/2 tsp tumeric
1tsp paprika
1-2 tsp chili powder
1Tbsp ground fresh coriander
2 cups chopped veggies (carrots, cauliflower, celery) or cod or chicken
1/4 cup almond butter
1 to 1 1/2 cups Ultrabroth
1/2 cup coconut milk (light) - (since finding out I'm allergic to coconut I will try almond milk next time)
Lightly brown onion in olive oil, add garlic, tumeric, paprika, chili powder and coriander and mix well. Add veggies (or fish or meat) and cook on medium for about 5 mins, stirring frequently. (for fish/meat cook a little longer). Mix almond butter with 1 cup of broth and stir until mixed well. Add to pan and cook 8 mins longer, stirring frequently. Add more broth as needed to have lots of sauce. Add coconut milk and cook 2 to 3 mins longer. Serve with rice or quinoa.
EDIT - I forgot! This actually is very mild. You may want to spice it up with some chili peppers!

My daughter is a vegatarian and I always try to prepare meals that I can use all the same ingredients, but create it in two pans, one for her and one for my meat loving boyfriend. Since she is a busy teen, if I can bump up the protein with tofu or beans I usually do, and this reciepe has a good combination of spices that will transfer well to tofu.
Thanks for giving us the receipe, because you were making me hungry for it in your other posts.
