I started reading the Ultrasimple diet book and I really want to get started

I started buying what I need but I am confused - I read the book and the recipes are kind of gross - the recipes online sound good but which ones are for the 7 days.  Anyone got any great suggestions and ideas - I am trying to convince/trick my husband into doing it to (since I feed us I think I might can make it happen) what are some great ways to eat these healty foods in the most tasty and LEAST confussing ways - I feel this is way over my head:-)

I love to cook, so I have fun using just the ingredients that are allowed and "mixing them up."  However, here is a tip:

I have made up the broth and use that for "snacks;" however, I also decided to make up a hearty, vegetarian soup by using the broth as a base, then adding sliced onions, carrots, and celery, along with minced garlic, oregano, and a small amount of sea salt.  Simmered it for about 2 hours (until veggies were cooked), added soaked/cooked navy beans (you can substitute canned beans of any type allowed in the program to cut down on time), and simmered a little more. 

Yummy!  I made up enough to be able to use it during the first few days of the program.  To mix it up further, add your 1/2 c. of cooked brown/wild rice to it for a lunch or dinner option.  Or, add a little Tabasco and wilt some spinach into it for another twist.  It is very filling.  You don't need much.  I make mine on the soupy side and normally eat about 1.5 cups in a sitting.

My husband doesn't like many veggies or soupy soups, so I took some of the veggies and beans, along with a little of the broth, and pureed it for him. He loved it!  This also gives you another way of getting the nutrients in a different form to avoid "boredom."

No time for making the UltraBroth--substitute a low sodium veggie broth, such as Trader Joe's low sodium organic veggie broth.

Your post saved me much agony about what to do for my lunches next week.  I'll be finishing up my prepared meals on Friday night (finishing up my 4th week) and need to do some real shopping on Saturday.  I picked up just enough supplies to make my UltraShake for Saturday morning.  I also plan on using the Trader Joe's broth.  Your recipe sounds so yummy and easy, I can see myself having it for lunch several days of the week.

If you download the UltraSimple Diet companion guide there are many recipes in there that all can be made for the 7 days.  If you watched Dr. Hyman's web video, he talks about the delivered meals and how you can choose almond-flax crusted chicken and brazilian black bean soup...all of these recipes are in that guide.  I have made maybe 1/4 of the recipes from the guide and they are all really good!  Another good resource I have found for recipes is http://www.wholefoodsmarket.com/ and you can go to the recipes section and search for recipes.  I think you can even search by gluten-free, dairy-free, etc.  But if you just read through the ingredients in the recipes and compare to what we are allowed during the 7 days you can decide what is appropriate to make.  It is a bit confusing at first, but you will figure it all out.  Since I also do all the cooking at home, my family was a little worried that I would be making all this "weird" stuff...but they keep saying every single night that they like this healthy eating thing!  They love everything I have made.  Good luck!
