Broth Question

I am on day 1 of USD and have been participating in the Enhanced version. While making the broth, my adult kids and wife remarked on how nice the broth smelled.
When they learned that I was "tossing away" the veggies they looked at my like I was crazy. They asked me why I could not put it all in a blender and puree it. I just shrugged my shoulders.
Can anyone tell me why we can't eat the yummy veggies in our broth? Thanks.

the nutrients are now in the broth. However for my next batch I plan to keep a couple of cups of broth in the vegetables and use my immersion blender and incorporate them. I think they still have some fiber and would taste good as a sauce over broiled fish or chicken. Sound good to me. If you try it let me know. I won't be making mine for another week. Good luck on your quest for better health and weight loss.

I'm so glad to see your question about eating the veggies cooked in the broth. i had the same question. while the nutrients are in the broth, the veggies do have fiber. i love veggies and will be eating them in addition to drinking the broth.
can anyone tell me if it is possible to access the health quiz before beginning the diet? in the book, he says to take the health quiz before starting the diet and i thought we could do this online but i can't figure out how to access it without activating the diet. Gloria

I was wondering if she ever used the veggies in a puree for a sauce. If you eat them as a chunky soup they really are rather bland and pale. They would probably be best pureed as a cream soup (no milk needed) or thicker as a topping.

Broth and discarding veggies

Julia Child would tell you that if you're making stock or broth, you've already gotten all the 'goodness' out of the veggies by the time you boil them an hour or more. She always discarded the vegetables.
Having said that, I do like to chop the shitake mushrooms rather fine and add (fresh)thinly sliced garlic to give the broth a bit of texture, so I can think of it as a 'consomme' - eaten with a spoon - rather than a beverage.
Using nori (seaweed) really takes the broth close to miso soup in flavor. Adding some of your daily allotment of mushrooms, onions, etc., makes a very nice meal starter.
