Stiffness in the knees after two weeks of UltraSimple diet

Hello,
I am doing the extended three-week version of the basic UltraSimple diet. My third week is ending today. For about one week now I have had stiffness in both knees.
I have followed the diet closely, using the first Ultrashake recipe, and organic food when available (no biological chicken around here except frozen uncooked...).
What can I do for the knees?
P.S. I have been a regular user of Glucosamine (a suppose-to-be natural supplement), having had moderate knee problemes for the past two years. I decided today to stop taking it, believing there may be a problem with it. Is that correct?
I also take Swiss One 50+ Male multivitamin supplements, have been for a while. I followed Dr Hyman's advice and am taking 4 capsules (800 gr each) per day of ascorbic acid.
Also, about 2 weeks before I started the diet, my doctor had prescribed Pantoloc (actually, a Pantoloc substitute) for acid reflux syndrome. I keep taking it because, in spite of the diet, if I don't, it gets worse.
