Anyone have any suggestions on what to do with the lemon peel after the juice is squeezed out other than throwing it away?

I put them down my garbage disposal to keep it smelling nice!
Any citrus peel works.

If it is an organic lemon I will grate the lemon peel off the lemon first and freeze it for later use in sauces, lemonade, etc. then juice it.

Hi Lois!
You can always put them in a small pan on the stove and scent the room with lemon potpourri, or if you have an electric potpourri pot, that works well also. I am freezing them to use later. Either as potpourri or as lemon peel.
