Beets

Doing the UltraSimple Diet 
Last week I used a large beet (by mistake) in my ultrabroth - the broth was a beautiful color and tasted delicious. This week I used a parsnip - yucky color broth and not nearly as tasty. I don't see beets in the book -- is there a reason not to use them?

Beets are great for detoxifying, but they are sweet and can add too much sugar. I think a small beet, or half a large one should be OK. I used a mixture of vegetables - parnips, beet, turnip, carrot, as well as the cilantro (which I don't like!), parsley, etc. The broth tastes OK to me as long as it is warm. I'm about to mix up another batch, which will most like not taste the same as I don't measure anything!

Thanks. I reread the book and beets are allowed as a vegetable - just not included in the broth. My broth doesn't taste too good this week but it's not undrinkable and I have made a committment to follow this diet.

When it comes to veggies, go for it, be creative and yes, beets are wonderul - they are loaded with phytochemicals that support both detox and the vascular system. The message: versaitility with veggies!!

You can use beets for the broth. It is full of minerals and vitamins and provides a wonderful flavor. I did suggest using root vegetables for the broth, and wish I could have mentioned every one. The recipe is simply a guideline and I applaud your creative culinary adventures.
