I just started the Ultra Simple Diet today. I like that it is simple, but I have to feed my family too and I like variey in my meals.
Has anyone used any of the brown rice pasta, crackers or other gluten free products? I also noticed soy or almond cheese and yogurts. They seem like they would fall within the guidelines, but am I streaching the rules to far?

Hi, welcome to the program. The brown rice pasta is delicious. My son eats the almond cheese but I didn't care for the flavor. I have had trouble finding any yogurts without some form of sugar--which is not allowed on the US. I use ground turkey and make turkey patties with chopped onion, red bell pepper, and mushrooms. They make a delicious portable lunch. We love the black bean confetti salad--it is very colorful and should appeal to the family--of course that will be after you finish the US week and are allowed corn. We have also made the turkey chili--it is a very good sub for ground beef. Hope this helps, mama foodie

I was really scared to try the brown rice pasta it has a strange color, but yum oh! I had to keep my head out of the bowl, but froze the leftovers to save for another day when I really want pasta.
I have also tried the hot brown rice cereal. I'm not sure if it is the same one as in the book because it cooked to fast. Anyway, loved it too. Used as a substitue for grits (southern girl's fav) or polenta to make a meal my family would enyoy besides "rice again".
The almond cheese was best in the grits, but used it on a salad and brocolli. I bought the tofutii sour cream, but didn't use it since I read sugar on the ingredient list after I brought it home.
There were three items I used that broke the rules but helped me and the family tolerate all the vegetables and almost no carbs. My favorite was Terra Vegetable chips with salt only that I only used when I really wanted crakers or bread, and only had a small handful. I also used the light Omega 3 butter substitute, but I used less than half of what I would normally use. I also snuck a teaspoon of dark honey in my shakes to make them palatable.
Even with all these changes to the plan, I lost 6.5lbs in my first week!
