I am nearing the end of the first week and I am allergic to soy products and am finding it challenging to follow the book and diet recipes with the soy focus. I am in the early stages of osteoporini and need calcium beyond my supplements and vegetables and would love any suggestions....

 Sesame seeds are very high in calcium and can be sprinkled on anything. My daughter used to have a hard time getting calcium and we used sesame seeds with her so I learned to get creative.

As for the soy in the recipes... I just use something else like fish or nuts. Sometimes I just add more veggies and then have my protein on the side. I find pine nuts to be a great substitute, even though they are a bit high in fat, they have a lot of protein. In place of soy milk I use unsweetened almond milk.

Dark leafy greens are very high in calcium. I am trying to use more in my meals, since they are also high in many other nutrients. They can be a little bitter, but if you blanch them in salted water for a couple of minutes, they can be added to stir fry, soups, or just drizzle with olive oil an add S&P.

You can also use the rice milk, if you can find one that does not have added sugars. If is fortified with extra calcium and I think it taste more like cows milk than soy or almond. It isn't actually on the plan, but since it is made from brown rice, it should be okay. There are several receipes where the almond milk would just not taste right, so the rice milk would be a good alternative to soy. However, it does not have the protein of the soy, so adjust your other ingredients accordingly.

For protein main dishes: (in place of tofu or tempeh or edamame)
Other legumes such as beans, peas, lentils
Substitute other beans such as black, garbanzo, white, red, lentils (all
types) in place of the soy.

For Beverages (in place of soy milk)
Rice, almond, hazelnut beverages but none would supply a similar amount of protein as soy milk
