Recipe Modification

I have almost finished reading this Excellent book "UltraMind Solution" and I am preparing to start the 6 week project.
However I have two problems:
1. I am Vegetarian (Ovo-Lacto) so no meat or fish.
2. I am allergic to Soy.
I have been unable to get an answer from UltraWellness using phone or email!
What can I replace Soy-Milk with??
What can I use to replace Meat and Fish in the otherwise rather tasty looking recipes?

I apologize.
Instead of soy milk you can try almond milk.
Instead of meat and fish you can try the recipes that use beans and legumes.

Will I get enough protein with Almond Milk? Would Hazelnut milk also be good?
I guess Oat Milk is out because it has some gluten.
Also I would like at least a meat substitute. Seitan has gluten, Tofu has soy, what else could I use so I get a healthy variety? Remember this is the UltraMind 6 wk diet with no gluten and no dairy. Eggs are OK but how many per week??
