Soy sauce, tamari, chili (sambal oelek) allowed?

Is soy sauce or tamari or chili sauce allowed?
Chili sauce (sambal oelek) comes from Thailand, has just chili, vinegar, salt, and two things that I can't identify.

red chilis, I heard it is very good for intestinal health.

I don't really know whether soy sauce is allowed or not, but remember reading something about no vinegar. That leads me to the second question about Kimchi. Isn't vinegar formed in the fermentation process? I think it is. So that would mean no kimchi during detox phase. After a week try reintroducing it.

I just did some more research and we are not to eat any vinegar, yeast, or fermented foods during detox.
