The daily blog begins.
Day 1:
Breakfast: Organic Oat Meal and Skim Milk
Dinner: Pinto Beans with Cornbread and Marinated Cabbage Salad with Water
Supper:Pinto Beans with Cornbread, Marinated Cabbage Salad, and Steamed Veggies with Water and Skim Milk
Snack: Kashi Pumpkin Spiced Flax Granola Bar, Plain Yogurt with Peach Purree and Skim Milk
I drink alot of skim milk and yogurt. The only two grocery stores in town don't carry many organic products, so I use as many fresh veggies I can get either from the grocery store or from a local farmer's market, but even that is limited to watermelons, tomatoes, winter greens, sweet potatoes, potatoes, beans, squash, and pumpkins. Living in a small rural area an 60+ miles away from any store with any variety of organic products is a challenge. Living single also limits how much I cook and the variety of food, so what I have for lunch I often have for supper for a few days. Budgeting is also a limitation.
