You could be eating sawdust -- and not even know it!
Sound crazy?
Let me explain.
On a recent plane ride to a medical conference, I started a conversation with the man sitting next to me to pass the time. I told him that I was a physician working in the area of nutrition.
He exclaimed that the new low-carb craze was a boon for business. I assumed he was in the food business -- but I was wrong.
When I asked him what he did for a living, he replied that he worked in the wood pulp industry.
So what’s the connection between wood pulp and low carbs?
As it turns out, cellulose -- an indigestible fiber starch -- is one of the main ingredients in processed low-carb foods.
And what’s another name for cellulose?
Sawdust!
Yes, cellulose gives us those low net carbs that food manufacturers like to cite on labels.
The bad news: Cellulose provides no nutrition -- and maybe even a lot of gas. Termites can digest wood, but humans can’t!
This is just one example of how the food industry uses slick marketing techniques to confuse, coerce, and bamboozle you into thinking that you’re doing something good for yourself by buying their new “health food” products that are simply slightly modified junk foods.
They’re taking advantage of our nutritional naivety -- and this country’s labeling laws.
Want another example?
Just take a look at the new labeling laws for trans fats.
These unhealthy chemically altered fats are found in almost every processed food, even though they’re known to be one of the causes of heart disease, cancer, diabetes, obesity, and dementia. Clearly, trans fats aren’t fit for human consumption and should be completely eliminated from our food supply.
So does our government protect us from these toxic fats?
Of course not!
Instead, through powerful lobbying efforts, the food industry was able to put a big loophole in trans fat labeling laws.
That means you can now buy the same old junk food -- with “zero” trans fats. But read the label’s fine print, and you’ll find the words “hydrogenated fats.”
The catch: Unless you know food chemistry, you probably don’t know that hydrogenated fats are the very same thing as trans fats!
Is this false advertising?
Well, not exactly.
According to the new law, manufacturers can claim that their products are trans-fat-free if they contain less than 0.5 grams of trans fats PER SERVING (1/2 cup).
But we know that most people eat the whole box or package of food and rarely eat just one serving. Most packaged foods contain 2 to 4 servings, which are usually never shared.
That means you are getting a lot more trans fats per snack or meal!
Plus, another loophole in these labeling laws allows companies with a storehouse of printed labels to use them until 2007, even if they don’t indicate the amount of trans fats in the food. That means that a company could have printed a year’s worth of labels on December 31, 2005 -- so it can use them on foods with large amounts of trans fats for a whole year.
Sneaky, right?
You think you’re getting trans-fat-free food, but you’re really eating trans-fat-FULL food!
And if you’re eating these foods on a regular basis (as the $33 billion that the food industry spends on consumer marketing helps ensure), then you’re still eating a lot of trans fats.
The result?
The government looks like it’s doing the right thing -- but you’re really just eating the same old junk with a new label that makes it look healthy.
The government wins -- and you lose!
Here’s one more example of how labeling laws hurt your health.
Remember the low-fat craze?
Americans fell for it hook, line, and sinker, guiltlessly eating boxes of high-sugar but “fat-free” Snack Well cookies -- which could actually be certified “heart-healthy” by the American Heart Association (AHA) because they contained no fat.
In fact, even a can of cola could be certified “heart-healthy” by the AHA because it’s fat-free!
There’s no doubt about it -- here is something very twisted about the food labeling laws, which are SUPPOSED to protect us.
But what they really do is protect the food industry.
We are duped into thinking that if we shop in a health-food store or buy foods that are labeled low-carb, or trans-fat-free, or low-fat, or heart-healthy, we are safe.
But the dangerous ingredients in processed foods come in many disguises.
That’s why my philosophy is based on eating unprocessed, organic, whole, real foods -- as close to nature as they were created -- whenever possible.
The best approach to buying and eating food is simple: If it has a label, don’t eat it!
Unfortunately, as we all know, that’s not always possible or practical. So here are some guidelines for being a more educated consumer and learning how to read between the lines on the labels.
==> Reading Food Labels: If You Really Have to Buy Something Processed
While the “if it has a label don’t eat it” rule is the ideal, consumer demand has led to the creation of many foods that are clean, whole, simple and that actually have clear labels. They tend to be found in whole-foods stores or the health-food section of your grocery store.
(By the way, if there is a “health-food” section in the grocery store, what does that make the rest of the food sold there?)
My general rule: Be a smart label reader.
Labels contain both the ingredients and specific (but not all) nutrition information. If the label lists any ingredients that you don’t recognize, you should likely stay away from it.
Follow these tips, too:
1) Don’t be duped by marketing.
Remember, the front of the label is food marketing at its most clever. It is designed to seduce you into an emotional purchase and may contain exaggerated claims.
2) Look for quality ingredients.
High-quality organic whole foods are now available in packages, cans, and boxes.
3) Check the order of ingredients.
The most abundant ingredient is listed first and then the others are listed in descending order by weight. If the real food is at the end of the list and sugars or salt are at the beginning of the list, beware.
4) Consider what’s NOT on the label.
Foods that are exempt from labels include foods in very small packages, foods prepared in the store, and foods made by small manufacturers.
5) Look for additives or problem ingredients.
If the product contains high-fructose corn syrup or hydrogenated or partially hydrogenated oils, put it back on the shelf. As I explained earlier, simply looking at the level of trans fats can be deceptive; you need to look at the actual ingredients to sniff out these dangerous fats.
6) Look for ingredients that don’t agree with you.
Identify food ingredients you are sensitive or react to, such as gluten, eggs, dairy, soy, tree nuts, or peanuts. Be vigilant about reading labels, as these ingredients are often “hidden” in the foods you least suspect. The labeling of common allergens is not always clear or helpful.
7) Investigate unfamiliar ingredients.
Search the Internet to find credible sources of information about any unfamiliar ingredients on the label before you buy. These include such as carmine, Quorn, and diacylglycerol. Credible Internet sources tend to be government or educational sites, which end in “.gov” or “.edu” rather than “.com.”
8) Discover if any “functional-food ingredients” are being added to the food product.
Though they may be helpful, more often than not, they are “window dressing” present in small amounts, and with minimal value -- except to the marketing department of the manufacturer. Examples of this include live active cultures added to high-sugar, high-fat yogurt or vitamins and minerals added to gumballs!
In other words, it’s best to get healthful, functional-food ingredients from their whole-food sources, rather than as additives to otherwise nutritionally empty foods.
9) Finally, ask yourself: Would your great-grandmother have served this food?
Before you analyze the numbers, ask yourself if this food could have been served at your great-grandmother’s table. She only served real food.
==> Understanding Nutrition Labels: Think Low GL and High PI
Glycemic Load (GL) is a measure of how quickly a food enters your bloodstream. The lower the GL, the better your health.
Phytonutrient Index (PI) means the amount of colorful plant pigments and compounds in food that help prevent disease and promote health. The higher the PI, the better.
Here are some questions to ask when you read nutrition labels:
1) Is this a typical serving?
For example, a cereal label may give the nutritional profile of a 3/4-cup serving when your typical portion is really 1 1/2 cups. Worse, the label may say that it contains 2 or more servings, when most people consume the whole amount in the container or bottle. Have you ever known 4 people to share one pint of Hagen Daaz ice cream?
2) Are the carbohydrates high GL or low GL?
Remember, the total amount of carbs is less important than where the carbs come from. If they are found in foods with a low GL and high PI, they will have a very different effect on your appetite and weight than foods that are quickly absorbed and have few nutrients and fiber.
3) Where’s the fiber?
It is one of the main factors that determine GL, and fiber can also give you a clue about the PI of a food. Many packaged foods contain no fiber, while some healthy items such as oils, spices, and herbs are naturally void of fiber. If convenience items such as soups, entrees, or snacks are missing this key fiber factor, leave them on the shelf.
4) What are the total carbohydrates?
Remember, the type of carbohydrates is what matters most. If they are from whole plant foods that contain plenty of fiber or have a low GL, their effect is very different from fiberless foods. The same amount of carbohydrates from a can of beans and from a can of cola affects the body in very different ways.
5) Where are the good fats?
Monounsaturated and omega-3 polyunsaturated fats should dominate this category, with minimal amounts of saturated fat and zero trans fats (present on foods labels from 2006 on).
Unfortunately, omega-3 fats are rarely listed independently on labels, but are listed as part of the polyunsaturated fat family. Other polyunsaturated fats -- like corn oil and safflower oil -- are less than healthful but also show up in this section of the label.
This list of rules may sound daunting, but once you begin analyzing food labels, you’ll quickly get a feel for what’s good and what’s not – and your body and mind will thank you for that for years to come.
Try heading to the grocery store and reading labels with your new perspective.

You are so right about misleading labels. It is just easier and much less time-consuming to eat fresh foods and forget the labels as much as possible. Your book "Ultrametabolism" has totally changed my attitude about food. I am actually scared to eat processed foods now, which is a good thing. I just turned 50 and am determined to reverse the ill-effects of my past eating habits. It is never too late. You have motivated and encouraged me to take a new path to a healthy life. If I may, I'd like to use this opportunity to request that your websites create a question-and-answer column regarding the Ultrametabolism food program. Even though I read the book cover to cover, I still have questions about what and how much to eat at meals, especially if one does not want to cook. It would be so helpful if you could answer various questions online from those of us who are using your program. Thank you so much, Dr. Hyman, for opening our eyes to the dangers of the American diet. I thinking people are finally beginning to wake up, especially for the sake of our children. Continued success to you in spreading the message.

I am quite the food label reader, and thought I was making good food choices. Then, when "Trans Fat" starting showing up on labels I was shocked to find out that my supposedly "healthy" cereal was loaded with it. Guess you can never stop being vigilant with this task.

I just saw a can of 7-Up the other day (someone else was drinking it). It's "All Natural" - so I read the nutritional information. High fructose corn syrup is way up there on the list. I told my my friends that is not "All Natural" - talk about misleading (and erroneous) information.

We are chronic food label readers at our house. I've got my kids trained and my 8 year old is the best at it and does a good job evaluating foods based on the fats, sugar, and fiber present. Even they have become quite wise to the fact that labeling is very misleading. We buy very little processed food. We grow our own food in our own large garden, and then freeze/can whatever we can without all the additives. We have learned to shop the perimeter of the grocery store--for fresh instead of processed foods. I also find it very interesting to observe what people are filling their cart with at the grocery store. It is quite shocking to see the amount of "non-foods" people consume: soda, fruit snacks (there's not even any fruit in them), frozen dinners, pop tarts, etc. I think most people do not realize how damaging this is. I am grateful to a mother who taught me how to cook and a family who appreciates real food prepared with care and love.

I just want to post an update. My wife and I have been on the program since Memorial Day. It's now almost labor day and I've gone from 220 to 202.5. I'm 6'-0" and didn't think I looked too bad at 220, but the change is dramatic. The other day a pretty difficult client stopped mid sentance in a meeting and said "Are you losing weight?". Then of course he wanted to know what I was doing.
My wife won't tell me her weight but her clothes don't fit any more. Neither do mine. This is becoming a pretty expensive program!
Actually, we just take the money that we save by not eating out all the time and put it toward the tailor's bills.
Anyone who's looking at this and thinking it's just the same old stuff should take heart. This can work for you. It does take more time to prepare real food but you have to get over that. Learn to enjoy cooking.
One other strange thing. When I have had the occasional bad meal like last weekend (burgers on the grill with american cheese). It doesn't really affect me. I think my body must have repaired itself to the point that a bad meal once in a while can't knock me off course. That's good to know. Once you get your internal system sorted out, it can take care of you when you can't or don't eat like you should.

I thank you for this information. I know I have seen cellulose on labels and didn't know what it was. I have cut out most processed food but thought I had bought some really neat Rice Chips called Rice Works. They say wheat and gluten free and natural ingredients and no preservatives. I thought hey, a healthy snack. Then I read your post today and then looked at the label more closely and discovered MSG! I have been on the wheat free and dairy free for about a week and dealt with splitting headaches all week and sinus problems. Maybe this snack that I thought was ok is the problem. Thank you for reminding me to look at every single ingredient. I thought I had.

I have a question about peanut butter, long touted as a healthful food. ( And, in fact, the main thing my son eats for lunch!!) The label says "0 trans fats", but partially hydrogenated oil is the 3rd ingredient. Btw, my son doesn't like the healthier kinds of PB so far. Any advice?

I have been a label reader for years and do more and more of my shopping at the farmer's market during the growing season and Whole Foods because it is so frustrating not knowing what some of the things on the labels really are. One disturbing thing is that you can still find products in Whole Foods that contain HFCS and hydrogenated oils. Not many, but enough that I still read the labels there.
In general I do all my own cooking, pretty much from scratch, but I can tell when I grocery shop that few people do as so many people are buying fronzen dinners, etc., no matter where I shop. I think that is pretty sad and I wish people would learn to enjoy cooking more. It does not have to be a chore nor does it have to take a lot of time to prepare healthy delicious meals. One thing I have noticed is that over the years I eat more simply yet use the best ingredients I can find, which makes cooking much easier. I try different olive oils, vinegars and sea salts. I rarely use bottled salad dressings anymore but dress salads simply with the best olive oil, vinegar or lemon juice and sea salt and pepper. I find the flavors of everything come through more. I have a few marinades that I can use on chicken, fish, or shrimp. I would like to find some easy grain salad recipes where I could manipulate a few ingredients and switch the grains to make different hot or cold side dishes but have not had a lot of luck with that. I usually devote 3-4 hours on Sunday to preparing meals for the week. Homemade soup in the fall and winter is a staple. I usually make a pot of grain cereal for breakfasts and a main dish that I can have a few times during the week. It does require some planning in terms of shopping but I listen to a Prairie Home Companion or my favorite music while I cook and it is a very enjoyable time where I feel I am taking care of myself.

This is my first time reading- my mom emailed me a copy of your latest entry.
I just was just wondering why you equated cellulose with sawdust, when that equation is entirely false. Cellulose is the primary structural component of green plants. As you say, it's an indigestible fiber, but last time I checked fiber was something humans needed for optimal health.
Yes, *some* cellulose may be sawdust (though I suspect sawdust is actually lignocellulose). And perhaps the cellulose added to foods really is sawdust. I don't know myself, but it's hard to believe what you say when you spread false information such as cellulose = sawdust = bad.

Hey Dr. Mark,
As a fitness professional for the past two years and health nut for the past four years I thought I knew almost everything that was pertinent to reading nutrition labels. The one thing that you really surprised me with was how food companies can use outdated labels that give incorrect information. As a personal trainer I'm inclined to believe in balance in everything. I don't take protein supplements or any kind of item you can buy at a vitamin store but eat just the way you described and my body has never responded better to training than it does now. I believe nutrition is just as important as cardio exercise and weight training. But if someone had to choose one I think that eating better is the single best thing anyone can do for themselves. Again not that weight training and cardio aren't important, but if you give your body better fuel and nutrients it's going to function better as a whole rather than if you kept eating whatever and worked out. Even if you have a fast metabolism you're not healthy and your internal organs are paying the price dearly even if your appearance isn't. So thank you for giving everyone the truth in a very easy to understand guide to healthy eating.

So what about all the low income areas found throughout the united states, that can't afford to eat whole, unprocessed, organic foods? Are they supposed to just "settle" with the frozen, canned, or heavily transported versions in their local store? Are you saying these groups of people don't have another option to help acheive optimal health?
Some people just can't afford to buy organic vegetables and fruit, along with meats and all the other protected foods.
I mean come on, let's face it, bad food is cheap and convenient, and feeds the financially challenged. I'm sure everyone would eat the things that are good for them, if they weren't tempted to buy a box of 97 cent macaroni instead.
(ex. buy whole wheat, unprocessed noodles, a block of cheese, and make your own= around $6.00 for about 6-8 servings.
A box of macaroni and cheese=97 cents for about 3-4 servings.) Preparing things the "right" way interferes with paying the bills, and possibly adds to the guilt and shame of feeling helpless.
I think nutritional integrity is all but history in America. Maybe we should all just try our best to eat as healthy as our country allows us, and exercise to make up the difference. Following 'specific, necessary guidelines' for optimal eating behavior sets people up failure. Not all the time, but I bet more often than not. The statistics of obesity displays this all by itself.
Sorry to rant, I think your book and resolve mean well... its just that only those with financial stability seem to benefit.
It would be just as easy to grow your own food as it would to eat the way you suggest. Too bad, it was a good idea though.

I eat mostly green foods, and foods without labels (ie, whole foods). I do have a couple of vices thought, and one of them is sugar, which I put in coffee with organic 2% milk. In trying to give up sugar, someone I spoke with suggested fructose. When I went to my health store, Wild Oat, the only fructose I found is made by splitting corn sucrose into simple sugars, glucose and fructose and then isolating and purifying the Fructose. So if one doesn't read the label carefully, one might think the fructose is from fruit sugars. My question: Is this fructose made from corn as bad as high fructose corn syrup? I have a feeling I know the answer... But by the way, what is the safest, most palatable substitute for sugar? (I won't touch the chemically produced ones, but some people say Stevia is good.) Can you clarify this issue for me. Is maple syrup the best, or honey?

Today's article reminded me of a label for a hot frink product that I saw a long time ago. One of the ingredients, used to keep the product from caking, was silicon dioxide. This, of course, is the minral used to make glass and transistors and is most commonly known as sand.
I also remember putting back a loaf of bread that promoted fiber "from Nature's trees", many years ago.

Hit the mark once again, and looking at the other comments, others feel the same way. Keep it up! I know from my experience, it is very difficult to speak the truth when we have been deceived for so long. From marketing, labels, ingredients and so forth, we are usually sold a bill of goods and shown an endorsement from some governmental agency to be safe. However, it is far from being safe! I am outraged with this practice, especially when the products are focused towards our children. There are thousands of children's products, foods, snacks, supplements and so on all supported and endorsed, but the majority of them are nothing short of poison and disease causing. Does the majority of people really believe that what we are eating or letting our children eat have no effect on our health? I understand that many people live in a financial state, where they cannot afford to buy whole foods or unprocessed foods. But think of this, would you rather pay a little more for food or products that actually promote health, or keep buying the junk that is out there, that is easy and convenient, then watch as that easy and convenient turn into a serious disease or possible cancer. The last time I checked, it costs a whole lot more for those treatments or medication. Eating sugar filled treats creates an acidic enviroment in your body. It has been researched and proven that cancer thrives in this state. However in the same research it was concluded that an alkaline state was too hostile for cancer to live in. I really hope and pray that we open our eyes, get educated with the truth, which is being covered up everyday and becoming very difficult to find, and live in health!

I really enjoyed the posts on this thread - some really good info and thoughtful comments. Eric's comments about the affordability of whole and nutritious foods are excellent.
I (like LoriZ) was surprised at the confusion created by the transfat label on commerical peanut butter, which Dr. Hyman's article also addressed. It's ridiculous that foods can be labeled "zero transfats" when they also contain partially hydrogenated oil as a major ingredient. It's patently absurd in terms of accuracy. I've learned to like almond butter, but it doesn't spread well on dry bread (I put it on toast) so getting kids to take it (or the healthy peanut butters)to school lunches is impossible. I'm having a hard time convincing my 15 yr old to stop taking PB&J on WW to school. Teen athletes with long (intensive) after-school practices need some protein and hate big boxes or insulated bags full of ice packs, so healthy lunches are difficult to pack -- and uber expensive.

Hey there folks! I love these blogs and reading them.
I agree with Eric and his thoughts. It IS too bad. I've seen what consumers buy with their food stamps and it's crap. But, 6 servings of a fresh fruit is cheaper than a big box of sugary cereal! It's the accepted level of consumer eduacation sauteed with the misleading food lables and government nutritional guidelines that will keep the less fortunate, financially and nutritionally crippled!
A bad example: I WILL NOT BUY HALLOWEEN CANDY anymore. I was warned when we moved into our new neighborhood (nice, middle to upper middle class) that truckloads of kids are brought in to go trick-or- treating here in order to get the good candy. It bothered me. So, instead I went to the dollar store and bought tooth brushes, toothpaste, hair ties, stickers, pens, pencils, anything but candy! It's caught on and now there's more than a few homes who are doing the same.
I refuse to participate in ill health.
And you know what else is on my mind? If your childs school has a canned food drive for the holidays, find out if the charity they are donating to will accept fresh fruits and veggies. It may give that needy family a fresh start!

A nutritionist once told me that if I can't easily read/pronounce any item on a label, I shouldn't eat the food in that package. Just another suggestion to add to what you said.

I have to agree with the fact that most people cannot afford to eat all the organic high priced food Dr. Hyman recommends. I was disapointed when I saw the cost of "atlantic salmon". Unfortunately I can only afford the farm raised salmon at walmart and Kroger. An apple cost 3 times the amount and the local health coop. I can only buy mine at the local farmers market pestisides included. I guess there is no hope for me. I bought Dr. Hymans book on ebay for 14.99. Little did I know that I would not be able to afford to do the diet. Maybe he should call it the "over 50,000 a year income diet." I have not lost any weight trying to do the diet on what I could afford. I guess I am destined to be poor and fat.

I only wish I could find a health food store in my town. I really feel helpless here. The closest thing I have is the organic section at Kroger. I loved Ultrametabolism and am trying my hardest to buy the freshest foods I can find but when you don't have access to them it makes it all the more difficult, and aggravating. You would almost think that someone could sue the government for decieving us like this and making it almost impossible to do something about it. Unless you have the time and energy to plant your own garden and raise your own cattle and chickens there really isn't much choice.

I believe in eating close to the source. The fewer additives there are, the easier it is to know what you're eating. Shop the perimeter of the grocery store. Produce doesn't have labels. The ingredient list of the store's bakery bread is shorter and usually doesn't have HFCS. Grow as much food as you can. Eat fresh stuff from the farmer's market.

Hi. An item that usually appears on food labels is modified maize starch, etc. In what way is this modified (GM?) and is this good or bad as an ingredient. Similar query on diglicerides of fatty acids. Look forward to receiving some help on this. Thanks, keep up the good work.

Ruth is right! Dr. Hyman IS richer! Plain & simple, refuse to buy it if it's junk! It'll disappear and be replaced with what WE want. Fresh IS best! If we only ate fresh fruits,colorful veggies and brown rice with a small amount(2-4 oz.) of any protein, everyday, we would simply NOT have a health crisis! We would not HAVE to read labels, wasting precious, quality, family time! We would NOT be bombarded with huge medical bills, or health insurance premiums. IT IS OUR FAULT that our food supply is less than perfect. Next time you're running behind on time, DON'T stop at a fast-food joint, stop at a produce stand! Apples, grapes, bananas, veggies, ETC...., foods from GOD, not processing plants! DO YOU REALLY KNOW how many bugs and worms you consume in fast food? Let's remember that if we can afford to shop at fresh fruit stands each day and buy organic beef at Whole Foods we should be grateful, not chastising others to buy junky toothbrushes at the dollar store for Halloween (or else!) or sending out shrill warnings about bugs in fast food. Eat your blueberries and chill.

There seems to be a lot of complaining about how much these foods cost and their lack of availabiliity. But not all of them are expensive and if you live in Podunk ever hear of the Internet? Rice and beans are about the cheapest foods you can buy, whether organic or not. If you don't have unlimited funds for groceries then you need to do some research. Go to the websites that identify which foods are OK if not organic, shop the sales and buy grains, beans, etc. in bulk off the Internet. Buy a whole chicken and cut it up rather than breasts; $1.59 a pound rather than $6. Yes, wild salmon is expensive but no one says you HAVE to eat it, eat something cheaper instead. Yes, Hyman spent 10 years at Canyon Ranch, one of the most expensive spas in the country, so of course he has a scewed view of what people can spend on food since for most of his guests they could spend any amount on food and probably many of them had a personal chef! So take what he says with a grain of salt and make it work for you. There are cheaper alternatives out there. But you have to spend some time, shop wisely and do your own cooking.

You think organic/whole food is expensive but consider the hidden costs of convential food. First you pay for the food at the store, then you pay for it again through your tax dollars so the government can subsidize convential food farms to produce more ... then you pay for it once again for clean up after fertilizer and pesticide run off effects the environment. You actually think your paying less for "normal" food??? How much is your health worth? I'd eat and pay for a dollar apple before I'd eat/pay for a dollars worth of twinkies. Dont wave off the benefits because of the cost... its exactly what the big food companies and government are hoping you'll do. Wake up.

According to the business section of the Chicago Tribune this week, produce (combined organic and conventional--they did not distinguish) costs 50% more at Whole Foods than at area grocers Safeway (Dominicks) and Albertsons (Jewel). "Same" products (I'm thinking cereals and breads, etc.) cost 60% more.
I'm a Whole Foods fan. I've been eating whole foods for most of my 49 years. Growing up in Seattle and northern California I've been a greenie my entire life.
That said, we are naiive if we don't think that people living beneath the median family income for any geographic area need to struggle to put organic produce and cooked-from-scratch foods on the table for a family of four. Work hours tend to be longer and children in strapped families tend to be younger.
Of course it can be done. I do, however, think that we need to not jump on high pedestals when we discuss the affordability of healthy choices.
My supplement (vitamins and minerals) budget is probably more than most people spend on groceries in a month.
When we discuss the universal costs of poor environmental choices and poor nutrition -- remember that for the parent trying to figure out how to put a full tank of gas in their car in order to get to work that week -- it's simply not a useful argument to talk to them about the long-term risks of anything....... we can lecture people all day long how cheap beans and brown rice are......but you won't be successful in changing any paradigms that way......it's all about a helpful attitude in educating and swaying people from every walk of life.....isn't it?

You're correct laurie... "we" -can- discuss the costs of poor environmental choices and poor nutrition. But "we" -have to- discuss it because the food producers dont acknowledge its existence. I dont see that anyone is "lecturing" anyone here. But people need to know. In a July 2006 L.A. Times newspaper article it was reported that
"Mexico has agreed to import as much as 500,000 metric tons of high-fructose corn syrup during a 15-month period beginning Oct. 1 and will abolish a tax on corn-sweetened soft drinks. The World Trade Organization ruled last year that the 20-percent soda tax was illegal."
These companies dont care about the poor people you talk about, or the general public regardless of status in general. Im not lecturing to the people...im complaining to the companies and government. In that regard I wont stay silent. Will you?

Totally agree with your points,rd -- I was referring to the post from "k", and to a lesser extent, ridincowboy. I don't like to hear lectures directed at people using foodstamps or myths about the costs of organic produce and fresh halibut & salmon VS. white bread and boxed macaroni. Right now, in major cites and suburbs across the United States, it costs MORE to eat a healthy diet over a lifetime than it does to eat the more typical American diet. Anyone who says otherwise is delusional. Should everyone pursue the ability to eat bottom fish and organically grown fresh spinach tossed with extra-virgin olive oil, champagne vinegar and walnuts, and fresh strawberries every night? You bet. Should we strive to make the people using food stamps to buy Kraft Mac & Cheese and wonder bread feel bad about it? Nah. "K" who is screaming at people who give out candy on Halloween is missing the big picture. The big picture is making organic farming (including seafood) economically viable and commerically sustainable.

This article of yours is a little long but very informative. I learn one more thing about reading food labeling.
In my practice,I started to tell patients to always read the food label carefully before buying any item. Now I will have to tell them about your advices That I read today.
It's a startling news to read your mentioning of cellulose. It's also an excellent point that termite can digest wood but we human can't.

laurie - I agree with you wholeheartedly. Organics will never be cheaper until they recieve the same gov't subsidizing as commercial food farms. When will that happen? Sadly never or not for many years and thats really unfortunate.

I loved this message. I just spent the summer in a rural town in Brazil where all our food literally came off the farm - black beans, rice, vegetables.... The people there are all naturally slim and look beautiful! The portion sizes were also a lot smaller than here and people were satisfied with them.

You absolutely must try Whole Kids Peanut Butter at Whole Foods.
It's just got palm oil in it, no hygrogenated.
It's better-tasting than Jif, which I have enjoyed my whole life but won't be touching anymore. I admit I just buy a couple things in that store and get the heck out, because of prices. But I drive 14 miles to that store for that peanut butter.
I was actually really angry when I read the ingredients on the new "All Natural" 7-Up can. It's nice to know I wasn't the only one.
I'm not a pop/soda freak, but sometimes I just gotta have one. My husband found a brand called Jarritos, in a Mexican store. It's made with sugar, not high-fructose corn syrup! So we drink that now, occasionally. But now I've gotten upset over R.D.'s note about Mexico's importing high-fructose syrup!!!!!!!! That's terrible!

what i would like to know concerning labels is : if you are a pre diabetic and told to have a certain number of carbs per meal , and the label lists carbs AND the grams of sugars , how do you get a carb count? do you add the 2 together??? CONFUSED!

Yes! We are so enjoying this summer of eating out of our garden. Cooking for your family is really becoming old fashioned. We eat breakfast and dinner together almost every day. We use very little prepackaged food, and love to experiment with varying ethnic foods. Even the occassional treat is homemade and usually doctored to include whole grains, seeds, honey, and healthy fats.
Most memorable meal this summer: We were visiting in Seattle during the Sockeye Salmon run, and went to the wharf and bought one that had just been caught. We grilled it with lemon & dill. Delicious! On the side we had corn/avocado/fresh greens salad (all items picked at the local market), roasted fingerling potatoes (the kind with lots of chewy skin), and blueberry pie made with blueberries we had just picked ourselves that day!

I read your post and I too like WF peanut butter. I also tried Dr. Hyman's recommendation to use almond butter as a substitute for peanut butter and it's great on toast. My favorite almond butter is the 365 brand at Whole Foods.
I wish, however, I could get my daugther to like the WF peanut butter. She dislikes the consistency (dry and thick) when it's been spread on bread in her lunch bag for three or four hours. I'm still searching for healthier yet tasty lunch ideas for a teenager's palate. Any ideas?

I'm 37 years old and overweight. I learned about trans fats last December (9 months ago). I made a significant effort to eliminate trans fats from my diet. I lost 21 pounds in 3 1/2 months. I still have more to go, since I weigh 168 lbs at 5'4".
I just now learned about HFCS from Dr. Hyman and will now eliminate HFCS. I'm hoping that eliminating HFCS will help me get past my plateau of weight loss and help me to become more healthy.
My 12-year-old daughter does most of the cooking in my home. She has a passion for cooking (thank goodness). She now makes desserts from scratch - no longer do I buy cake mixes and ready-made frostings. She also doesn't make as much as she used to.
Do you have a recommendation of where we can find recipes that incorporate your dietary guidelines (whole foods, good oils-olive, no trans fats and no HFCS)?

I'm a single, health care professional with custody of two grandchildren. I agree whole-heartedly with your program, but I'm struggling with a sense of bankruptcy, spiritual, emotional, temporal, and financial. Keeping up with the children, the house, and my practice is harder than my training days. I have two fairly serious health problems, both of which would be improved by whole foods. I continue to try to increase the proportion of whole foods in our diets, but it is hard to plan and implement with little time.

I received my copy of Ultrametabolism yesterday and immediately went to the recipe section so I could get started eating right immediately. I found words like Amaranth, Buckwheat groats (kasha) Quinoa, Teff and many others. I live in a small southern town that is the heart attack capital of the US. We don't have health food stores and the grocery stores sure don't carry anything that might even be close to this. I am a single man who can cook pretty well, but I need recipes for real food that I can find. I understand your concept of eating whole foods, that makes sense which is why I bought the book, but how do I apply that good sense to the availability of food in my area??

I am a RN and have seen so many people struggle with weight and end up having bypass surgery because they could not change their diets. I am now in a job where I travel all the time and don't have access to the foods I would like to eat. I was inspired by the truck driver who wrote in. I just purchased the book and want to get the information. If anyone has any suggestions for me with traveling on an airplane all the time and staying in hotels, please let me know as I want to be successful in this.

While I have supported eating whole foods from a nutritional standpoint, he discusses industrial and organic agriculture in this book. VERY interesting arguments that support the same things you are promoting with some of the same info (he discusses the govt subsidization of corn and soy) but also presents a lot of arguments for sustainable agriculture. If you haven't read it, I am sure you'd enjoy his book.

I really agree. I feel it is better to pick healthy foods, learn how to eat healthy foods, and avoid things that aren't healthy. Many of the processed pre made foods have ingredients that create illness.
It is harder, and it takes time to make food from scrach but the benefits outweighs these problems...

Ease of preparation is my thing. I want to be able to throw a piece of salmon in the microwave, while I'm opening a bag of salad makings (that's assured of being safe) and serve it to my family in minutes. Give me "good for you" recipes and products that are just as fast as McDonald's and I'm there!

I have been on Phase I of the Ultrametabolism path for several weeks. It has been a transition. Giving up soda was tough. I indulged my self in about five different flavors of green tea. I make tea in glass jars that I have saved from buying expensive good green tea and reuse. (Don't use plastic bottles - I think pouring boiling or near boiling water in plastic has its own issues.) I fill up a basket with tea, snacks, and fresh water and go to work. People tease me on my way into work every day but I am sooo much healthier. The breakfast cereals in Phase I can be made ahead in glass bowls with plastic lids (really cheap at Crate and Barrel) I really like them cold. So once a week, I make tea and two different cereals; doesn't take too long and I have my toughest problems solved. Some day they will stop teasing me about my amazing lunch basket.

I work 4 (12-hr) days behind a desk. I used to leave work and swing by fast food place and return to work. Now that switched to whole natural foods and avoiding all processed foods, I find that I must make lunches for the days I work ahead of time in a TV dinner form. Now I bring my food to work and avoid fast food. Our work has a workout gym, I eat at my desk and use my lunch hour for workouts. I feel I have less stress now and not to mention loosing weight.

I am also from a small town and have run into the same issues. I have to drive an hour from health foods and with the cost of fuel, I find it a waste. I shop online and the fedex or ups man delivers the stuff I need. Try these websites

Please put Ms Nenah Sylver into Google and read "Does microwaved water affect plants?" and then go to www.mercola.com/article/microwave/hazards2.htm for another article on microwave cooking. Please read this. Then, "opening a bag of salad makings "that's assured of being safe"....Iv'e been told that there is a gas that is in those bags of salad makings and there is a question if it is good for us or safe for us. I have made inquiries to find out what the product is but as yet haven't had an answer so far. I won't use things until I know what I'm dealing with.The alternative is to purchase salad greens from the open boxes.

I enjoy your email blogs. They are informative, enlightening and easy to understand. I had a severe episode of depression back in January, 2006. It was something I never want to experience again. It was then I deceided to gain control of my life and 8 months later and 56 pounds lighter I feel so much better. I have not dieted at and I never once felt deprived or hungry or had urges to fall back into old ways. I keep your blogs in the back of my head and when I eat a meal I choose salads, lean chicken, even when I go for Chinese it will be a steamed vegtable dish instead of the fat laddened traditional dishes. When I have a craving now it is for a good salad or when I am really hungry I pick up the fruit or nuts and I never drink anything but water. I also have a crazy lifestyle where I get up at 1:30 am and go to bed at 9:30 or 10:00 pm but I do at least 45 minutes a day on my treadmill and on Friday, Saturday and Sunday I have more time so I do at least an hour or more. I also add in sit-ups, crunches and leg presses each night and I never miss no matter how tired I am because believe it or not you will find exercise becomes a treat for you and after a good work out you feel you have accomplished something really good.

I've known that processed food and concentraited sugars were bad for me from a young age. But until recently I hadn't actually started taking my own believes so seriously. Between research, including reading tons of things by you Dr. Hyman, and things my mom has told me and actual experimentation I've realized that the worst thing for my body is High Fructose Corn Syrup. It gives me headaches, makes me feel sick, actually makes me sick if I eat too much, makes it hard to sleep, hard to get up in the morning. It also promotes candida! Since I've removed all products with High Fructose Corn Syrup from my diet I've experienced an amazing difference. I feel like a whole new person. There is nothing like a *real* meal, and I love the way you express that. I hope one day all of America gets your message, it's a powerful one, and one that is needed desperately. It's almost as though the country as a whole has decided it wants to be fat, unhealthy, unhappy and illogical at all times possible. And I find that very very sad. But it's just because so many of us don't KNOW enough. You have the power to change that. I'd like to see you on TV and on the Radio. I'd also like to see you start your own line of food, resturaunts, and more. I'd also like to see you with a more "high class" website. A quick tip on cooking with beans (legumes). Once every 2 weeks, I set aside a day to cook up 4 different kinds of beans. I use the short method (boiling beans for 3 mins, letting sit for 2-4 hrs.--then cooking again in new filtered water until done). I freeze them in pint jars and have them ready to use for the next two weeks. Works great!

My comment is that while my husband continues to lose weight, I have hit a brick wall! I lost 15 lbs. quickly, with in the first 4 weeks. I have lost another 3 lbs. and cannot get past that 18 lbs. I really need to lose about 25 to 30 more lbs. Any suggestions will be most appreciated! My husbanmd has lost 25 lbs. and continues to lose. We began your program the second week in May - and feel SO much better! Thanks Again!

Nick, I too want to cut out processed sugar, but what do you substitute? What are unrefined sugars and where can I get them? I see that the Kashi cereals I eat contain cane juice, but I can't substitute that for brown sugar in recipes. I'm not a big fan of using Splenda or sugar-substitutes since they're manufactured, but do you know anything about unrefined sugars?
